十八般武艺,样样精通,谈何容易?但对于私人厨师 Poonam Singh 而言,十八般厨艺,样样皆通,似乎与天俱来身体里就流窜着厨师的血液,加上早年师承自祖母与母亲的好手艺,就地取材就能随时办桌,看得大人好生羡慕,随之而来的即是餐桌旁如数家珍般的絮絮话语与碰杯声响,「快乐的厨师所准备的佳肴自然也将愉悦当作食材之一」,有 Poonam 在的地方,就少不了其招牌爽朗笑声,大人心想,这绝对就是她的美食密码啊!

With the love of food running through her veins owing to her Assamese lineage, Poonam attributes her passion for cooking to her mother and grandmother who encouraged her from an early age to participate and observe in their cooking. Whether she is concocting recipes for her latest project or conducting cooking classes for culinary enthusiasts, Poonam‘s contagious enthusiasm can transform ordinary meals into dining adventures.

来自印度东北区近中缅边界的阿萨姆省、毕业自孟买并曾在多家印度顶尖银行服务近10年的 Poonam,随着夫婿将工作重心从印度转移至新马两地后,她也义无反顾地卸下了银行业的职务,一家四口之前曾在新加坡生活了3年,尔后移居至新山也已有4年的光景。Poonam 乃本地 The Expat Group (TEG) 的活跃分子,TEG 由一群旅居马来西亚的外籍人士所自发组成,透过定期的多元活动交流让来自世界各地的朋友们在异乡也能迅速融入与体验在地文化。这一天,与咱们一同到此作客的还有来自西班牙与英国的朋友,大伙儿应 Poonam 之邀,一边吃菜配话,一边把酒言欢,透过舌尖上的美食将不同的文化瞬间拉至最短之距。

Hailing from the beautiful Assam province in northeast India which borders China & Myanmar, Poonam graduated in Mumbai and had worked with top notch banks in India for nearly 10 years before leaving her corporate career and took the role of homemaker. Having followed her husband whose work brought her and their family first to Singapore, where they lived for three years before they moved to Johor Bahru for the past four years.

While she got acquainted with the city she now calls home and made many friends through The Expat Group (TEG) and numerous Mingle events, Poonam longed to do something useful with her skills in cooking and baking. After all, the transition from a corporate professional to a homemaker was not as easy as one imagines. To keep herself occupied, Poonam started experimenting with different recipes during this time and never imagined she would be serving nutritious and delicious meals on the dinner table other than her own…

Poonam 的厨房里,一切在大人眼中看似风马牛不相及的食材,譬如那总耀武扬威的辣椒与各式香料,到了她手中立刻与其他食材显得「惺惺相惜」,合拍至极。还记得每回观赏烹饪节目时,厨师们一派轻松地把材料份量标记着「适量」「少许」,殊不知这在厨房里得经过多少的摸索才能成就的进退自如,「就连火候也被掌控得服服贴贴啊!」

Determined to change public perception of Indian cuisine as heavy and difficult to cook, Poonam prefers to keep her dishes light, fresh and healthy. Cooking being her passion, there is no question about doing it full time or spare time, as it’s always a pleasure to cook for Poonam. 这一系列色彩艳丽的印度料理,除了是 Poonam 熟悉的家乡味外,更是她款待朋友的味蕾之礼,看着满桌令人垂涎的佳肴,心中不免闪过一丝儿时被母亲赏以大餐的情怀,到底是谁才有乡愁呢?「在印度,傍晚时分我们通常会先吃些零嘴垫垫胃或等候家人从数小时中的车龙返家团聚,晚上10点或11点之后才是正式吃晚餐的时间。」同样身处亚洲,想不到进餐习惯大不同啊!咱们的宵夜竟是他们的晚餐,「大人我心想大半夜里还得料理晚餐和善后处理就觉得极度不可思议,但这就是世界文化里最有趣的一环啊!」干杯!

According to Poonam, Indians love to have guests over for dinner and guess what, they are considered as “gods”. What we found even more surprising was the fact that dinner in India usually happens after 10pm with all family members present. As people working in the cities leave offices around 6.30pm and make it home after driving through traffic for about an hour if they are lucky. Once home, they fresh up and indulge in TV for another hour while waiting for someone who is not there. We secretly counted our blessings that this was not the case in JB and certainly calls for a celebration. Cheers everyone!

We love the fact that we can just open our own wines, sit down as long as we feel comfortable, talk to Poonam and understand what she is making and the story behind the dishes. Even for those of us who are carb-conscious, we thoroughly enjoyed the Kulfi too, which is like a denser, creamier Indian ice cream.
