前身为毗邻 Paragon Residences 公寓销售展示厅的精致西餐酒馆在前者功成身退后，经设计师巧手披上华丽的夜衣裳后完全脱胎换骨！据闻这儿拥有全新山只此一家的熟成牛肉 (Aged Beef)，大人今日傍晚就为此慕名而来！还未入内就坐之前大人循例先站在馆前环视一番，从容而简约的独栋双层建筑真是越夜越美丽。
Nicely perched on the edge of the Straits of Johor, residents around the neighbourhood have further reasons to cheer in one of Johor Bahru’s most exhilarating luxury address, especially if you are within touching distance to one of the city’s most talked about restaurants and pours of exquisite wines, beers and spirits.
Located at Jalan Tengku Puteri 1 off Lebuhraya Sultan Iskandar, The Gallery Wine & Dine was formerly the sales gallery of Paragon Residences (just across the road) which has been repurposed into a high-end bar and restaurant after the luxury condominium’s completion. Reputed to be the only restaurant in Johor Bahru to age their own beef, we can now tuck into a sumptuous lunch spread by day or contemplate the sunset with a signature booze as the night lights of the city come to life.

Glass doors swing open to unveil arguably JB’s most stylish “restro bar”. On entering, the floor to ceiling wine centrepiece display catches the eye, followed by a glass-covered wine cellar on the right and an equally vast open kitchen on the left. The central bar area is bedecked with golden designer hanging lamps which lead into a spacious tobacco-free main dining area, while a performance corner stage has also been carved out for live gigs every evening from 9pm to midnight (except Sundays). Appointed with elegance and luxury, the sophisticated golden hues and plush furnishings lend a touch of grandeur that presents The Gallery Wine & Dine as an ideal venue for both informal meetings and grand banquets, where you can entertain between 150-200 guests with confidence in this highly versatile and splendid space.

This main dining room captures the charm and grace of an elegant bygone era with its rich timber panelled walls and plush leather seats, inviting everyone to leave the day’s cares at the door and unwind to the epicurean experiences that would whet and sate the appetites of the most discerning diners and drinkers.
豪华贵宾包厢 VIP private rooms
无处不宽敞的 The Gallery Wine & Dine 当然也贴心设置了四间格局各异的豪华贵宾包厢 (餐饮详情可向店家查询)，底层的一号与二号厢房位于玻璃酒窖旁，此二厢房可将屏风全数开启二合为一，非常适合筹办小型推荐会或公司聚会 (一号与二号厢房各可容12-16人，合开可容32人，若为推荐会包场将提供投影播放器)；三号厢房则位于底层暖木餐饮区旁，室内复古优雅的风格有着静雅之美 (三号厢房可容12-16人)；位处二楼的五号开放式厢房较为独特，共分室内与室外两区，既可饱览户外街廓，也能畅享无尽星空 (室内可容6人；室内与室外可容18人)。
The Gallery Wine & Dine hosts several well-appointed private dining rooms with thick dark wood and luxurious leather furniture. Located just next to the private wine cellar, Private Room 1 and 2 can comfortably host a party of 12 to 16 diners respectively but with the flexibility to remove the partition between them to open up more space for up to 32 guests. Private Room 3 offers a more retro look and feel that can also house a party of 12 to 16, while the more exclusive Private Room 5 located at Level 2 offers the perfect vantage point to chill and people-watch with indoor seating for 6, with the added outdoor alfresco enjoyment for a further 18 guests.

The hobby of wine collection is indeed an enjoyable and fulfilling endeavour among aficionados and wine enthusiasts can now have a private storage for your collection in the wine lockers. For the uninitiated, The Gallery Wine & Dine’s private wine cellar stock an eclectic range of wines from around the world from premium to moderately priced labels with high wine ratings. Although not exactly a cigar bar per se, the wine cellar has a private smoking room further inwards for up to 8 guests to indulge in a few cigars all while sipping on the premiere whiskies, wines and cocktails served at the bar or the privacy of the spacious and cozy cigar room all to yourself.

位于入口处的高台酒吧区，入夜之后在各式酒饮如威士忌、红酒、香槟、生啤等的伴随下气氛更显热络，俨然是视觉与味觉的交汇点。Happy Hour 则为每日的下午4点至8点，屈指一算，下班后还来得及喝一杯啊！(若自携酒饮，开瓶费为每瓶酒RM50，香槟开瓶费则为每瓶RM80，威士忌则视年份分为RM80、RM100及RM120)

前菜 – 芝士番茄焗帝王菇
Cheesy Tomato Stuffed Portobello
经慢烤30分钟后上桌的芝士番茄焗帝王菇 (Cheesy Tomato Stuffed Portobello, RM29) 散发清香真是对胃，「由于今日所点的主食大多为肉类，因此前菜就来些菌菇食蔬吧！芝士番茄焗帝王菇，每一种食材皆是大人平日所爱，非点不可！尺寸如手掌般大的帝王菇与芝士 (Mozzarella) 最为匹配了，主厨再以樱桃番茄与微绿植缀之，营养指数立即升高。大人才刚咬下一口，菇汁与芝士满嘴窜香，回味甘美，毫无花俏的原汁原味就有此般魅力。一旁的百香果沙拉适时为喉舌间带来一股清新，这一道看似简单的前菜，滋味却一点都不简单。」
When we need a meal that’s satisfying abut won’t leave us feeling heavy and weighed down, this Cheesy Tomato Stuffed Portobello is just the thing. What real showstopper it turned out to be, even if it took a good 30 minutes before these generous chunks of portobello mushroom stuffed with stretchy gooey mozzarella cheese, cherry tomato and micro greens served with a bed of light, refreshing salads drizzled with passion fruit dressing making it an incredible but simple entrée. We are pretty sure this perfect party appetiser will have your family and friends begging you to bring them to every gathering for the rest of time.

Blackmore Full Blood Wagyu Beef Burger (250g)
这应该是大人所吃过最奢华的汉堡了 – 澳大利亚纯种和牛汉堡 (Blackmore Full Blood Wagyu Beef Burger, 250g, RM92)。「如此顶级的汉堡，当然得让大人为各位层层解析：顶层微煎过的汉堡面包口感淡甜香脆之余，还因沾着底下的蛋白、酸菜、大葱圈及芝士而更入味入心！重点是酸菜的微酸度毫不抢味，与大葱圈相融极合拍！主角澳大利亚纯种和牛单听大名就知来头不小，据知澳洲赫赫有名的五代养牛家族 Blackmore 严以谷饲600天的 Full Blood 仅占澳洲和牛约1%，难怪这汉堡身价不凡。以非全熟姿态现身 (medium) 的和牛肉饼加入了主厨独家秘方调味后，却又巧妙保留了原汁原味，咬下一口方才知晓肉质为上好的牛扒以丁状捏合而成，品尝起来异常甘香而又软嫩多汁，搭着面包、鸡蛋、酸菜与芝士，简直大满足！」一旁的食蔬大人也没敢忽视，微甜汁满的红番茄经薄盐加身后，轻咬一口后即爆浆，中和了爽尝牛肉汉堡后的浓腻，必试啊！原味的大薯条也绝不普通，越嚼越生香。总结成词：这是一道主次分明的汉堡，肉质为核心，配料居次，值得宠爱自己一回啊！
Burgers in JB these days are never dull, but the coupling of a premium-grade steak into a burger had us wondering if this would be a total waste of such good produce. Turns out that this massive Blackmore Full Blood Wagyu Beef Burger is insanely extravagant but hearty, with a whopping 250g worth of premium beef slabbed with juicy pickles and sliced onions with egg white and more cheese sandwiched in between two super soft, toasted buns. For the uninitiated, Blackmore is best known for using unique farming methods that integrate old world Japanese farming with new scientific methodologies, and the cattle are raised and allowed to freely graze on grass supplemented with specially designed grain rations for 600 days that are free from growth hormones, antibiotics or genetically modified food. The prized wagyu patty has the right amount of wagyu marbly fats, with that rich, savoury sweet beefy juice oozes from the chunky tender flesh which we thoroughly enjoyed with every single effortless mouthful. Seriously, you have to bite (and not slice really) into it to enjoy all the wholesome goodness and fresh ingredients. Now who says burgers cannot be “atas” or simply upmarket?

Herb Infused Baby Lamb Loin
这道可是主厨极力推荐的香烤澳洲小羔羊里脊 (Herb Infused Baby Lamb Loin, RM99)，60天谷饲的澳洲小羔羊肉质呈现鲜红色泽，口感软嫩、脂肪比例完美，以香料抹身加以微烤后果然让大人们齿颊留香赞不绝口啊！「虽只以些许香料加身，却毫无羊膻味，相当可取。软脆之间的口感之美就算只用肉眼也能真切感受，若想增添层次，不妨点配随附的棕酱。千万别错过一旁的当季食蔬！这一季新鲜为看官们送上的就是吸睛的微型胡萝卜与自家的微绿植，还有令味蕾感动的马铃薯丁！」
The Herb Infused Baby Lamb Loin comes highly recommended, using only the grain-fed cattle for over 60 days for this evenly pink meat that is very flavourful, not to mention tender to the bite. Served with seasonal micro greens, baby carrots and homemade mash to neutralise the subtle, juicy gamey taste, the loin was balanced well with the brown sauce for additional flavours.

Honey Mustard Baked Chilean Cod Fish
蜂蜜芥末香烤智利银鳕鱼 (Honey Mustard Baked Chilean Cod Fish, RM90) 好丰腴！鳕鱼的独特鲜弹口感与独有的深海鱼香密码只需微微的调味就能成就极致的好味，再啜喝一口来自纽西兰的 Fairbourne 白酒更臻完美。「来自智利的极深海鳕鱼肉如凝脂，产量极少因此愈显珍贵。肉质既新鲜细嫩又紧实弹牙，微鲜咸的调味主要佈及香脆鱼皮，蘸上轻甜的秘制蜂蜜芥末足以平衡鱼韵。同样缀以自家微绿植与当季食蔬，大面积的留白凸显了大人最爱的那一弯鱼卵笔触啊！」
The Honey Mustard Baked Chilean Cod Fish makes for a refreshing change from our earlier red meat consumption, where the fish was baked and then grilled to give outer layer a slight crisp, while the tender white meat remained ocean savoury with a creamy sweetness. Nicely complemented once again by a seasonal selection of microgreens and further enhanced with the honey mustard sauce for a hint of subtle spice, the dish is best paired with a glass of sauvignon blanc from New Zealand’s Fairbourne Estate for its medium body and fruity notes.

新山仅此一家的 Aged Beef，这就是大人今日慕名而来的压轴美食！品尝之前循例得来了解何谓熟成牛肉 Aged Beef，空有「食欲」而没有「食育」可非大人的品尝风格 😊 。Chef Sean 亲自展示了这一大块置于自家恒温室里28天的干式熟成牛肉，乍看之下是不是有一丝金华火腿的影子？Chef Sean 解释 「一般牛只经宰杀后肉质的软嫩度骤减，以欧洲传统熟成方式所处理的牛肉则因肉质接触空气挥发的蛋白酵素作用而使之恢复柔软，熟成地越久价格也随之昂贵，肉质收缩后越见软嫩，肉香就越呈香醇。烹调前需将已风干脱水的牛肉切刮出精华肉片 (如图)，待会儿你们所品尝的牛肉就是28天的熟成牛肉。」
The Special Aged Beef Cuts has been receiving raving reviews and it has certainly lived up to them. The highly precise technique is known as “dry-aging”, where the meat is left to mature for a minimum of 28 days in a climate-controlled space in-store, through a natural stage of tenderising itself to reach the perfect texture and flavour. The process may be lengthy to elevate the premium steak to even greater heights, but Chef Sean does a near-exemplary job, and its ongoing popularity is testament that makes the effort well worth it.
这一道熟成了28天的香烤澳洲和牛排只以胡椒与海盐调味 (Special Aged Beef Cuts, Market Price) ，搭以传统棕酱与特调黑椒芥末酱的匀和体、薯片、盐抹番茄及三色咸味深重的海盐：红海盐为辣椒口味，黄海盐为西芹柠檬口味，黑海盐则为黑炭口味。「熟成牛肉的肉质极为出色，嫩中带有嚼劲，实在无需太多的酱料缀饰，顿觉原来美食也能如此被期待，大人咀嚼到脂肪部位时还能尝到一股香气！好吃到极致啊！」
The “dry-aging” results in mouthwatering red meat cuts that burst with umami-rich juices when bitten into, that the steak complements just about anything from the gourmet chips, salted tomato and accompanying homemade special sauce. Out of curiosity, we rub our steak with a dab of naturally flavoured sea salts provided, from a choice of red (jalapeno), yellow (celery) and black (activated charcoal), and voila, the resulting steak tastes even more tender and oh-so-juicy! A wise move indeed…
