假若能回到廿四岁,你会为自己的人生做些什么规划?今日大人专访的对象,就是一位对生活有要求,不怕犯错只担心错过。而他,正好廿四岁。

自2015年12月30日立业以来,短短一年光景就将 Sugar On Top (SOT) 打造成新柔两岸知名的美食品牌,除了位于新山彩虹花园的总店外,旗下於茂奥斯汀、五福城及古来也另有三家连锁加盟店,品牌蔓延速度之快让人不得不刮目相看。这家 SOT 确是他个人的第一个宝贝,换个角度来说,大人今日访的不仅是一家餐厅,更想要与各位分享一个真实90后年轻人创业的故事。

The success story of 24-year old Derek Tan is part of a fast-growing cafe entrepreneurial scene, underpinned by the “third wave” of coffee movement which has long hit Johor Bahru. As far as we can recall, cafes weren’t really popular (save for Starbucks) until about two to three years ago, but the phenomenon seems to be still going strong today, which sees many independent boutique cafes garnered immense popularity.

Located at the corner of a row of shops along Jalan Kuning, Sugar on Top (affectionately known as SOT to its legends of fans) is synonymous with their Asian fusion cuisine and charcoal waffle. Such is their popularity that it’s highly likely that you’ll have to wait for seats no matter what time you go. In a short period since their opening on 30 December 2015, SOT has made further inroads to other parts of the city, much to the delight of their customers from Mount Austin, Sutera Utama and Bandar Indahpura.

Sugar On Top 闻其名后的第一印象即为主攻甜品的专门店。其实不然,SOT 发展至今已渐渐与时尚、创意、设计等画上等号,打着「We are not crazy Just SOT的口号,各式以其为名的产品如 Tee-Shirt (共3款设计,每款RM49)、创意红包等开始在线上引起关注,商业脑筋果然动得极快。Derek 不讳言经验饮食业压力之大非常人能理解,面对排山倒海而来的激烈竞争,若无法及时开发源源不绝的创意爆点根本无法站稳市场,「我们一直都在无间断开发新口味,既要能让顾客们接受,也需确保品质,同时得不停设计顺应市场需求的新爆点。」Derek笑言,那种无形压力就好像一支他自己非常喜欢的乐团,在头炮一首首歌曲陆续爆红后,市场开始期待或质疑下一张专辑是否能延续传奇。

The youthful team led by Derek is definitely not crazy, just SOT (Singlish slang for wacky) in constantly experimenting and coming out with bold and gratifying treats. Besides emphasising on innovative Asian fusion cuisine which he observed while studying and working in the UK, Inspired by his love for pop music culture, his passion also spans beyond F&B across other creative endeavours such as coming up with their own signature tees and angpow collectables.

90后的经营脚步之快,还真让人咋舌,除了新山的总店即将更新餐谱之外,「2017年初,我们将展店至北马槟城。」现时的 SOT 与槟城的合作伙伴已进入倒数开店阶段,难得 Derek 此时能抽出宝贵的时间与大人分享,「彩虹花园的这一家店绝对是我的宝贝,装饰看起来并不那么华丽,但这里的一切都是我自己亲手设计的,我还是倾向把焦点放在食物上。」接下来 SOT 即将迎来首个周年纪念,陆续展店的步伐也将放眼柔佛州境外。90后的品牌观念,早已颠覆传统的营销策略。

Such were the ambition and speed of the new millennial entrepreneurs that Derek is already looking to spread the SOT story beyond JB, with grand plans already underway for their first outlet in Penang slated for early 2017. No matter how far and fast the SOT phenomenon spreads its wings, the inaugural shop in Taman Pelangi will always hold a special place in his heart, which led us back to the very place where it all began…

大人额外加点以灯泡造型出击的杏桃茶 (Apricot & Peach Tea, RM12.90) ,带有淡淡的果酸与茶香。瞧瞧待会儿端上的主食,其实不难发现杏桃茶即将全力发挥的双重用途:解辣与解腻。

Looking to brighten up your day or simply wet your whistle, you can’t go wrong with the Apricot & Peach Tea in this light bulb-shaped bottle which tastes refreshing and look both trendy and appealing to the eyes as well.

新加坡辣椒螃蟹意大利面 Singapore Chilli Crab Pasta

来到 SOT 怎能不尝尝其招牌新加坡辣椒螃蟹意大利面 (Singapore Chilli Crab Pasta, RM21.90)?「份量十足即是 SOT 的最大特点!加入了蛋黄后的新加坡辣椒螃蟹意大利面,称职地中和了原有的辣度。被甜辣酱交缠后的面条软硬度适中,当然不可不提的就是螃蟹丝的份量超多啊!💗 」

Having spent a good part of our earlier time in Singapore, we can be forgiven for being SOT in ordering this Singapore’s national favourite in JB! Made up of a generous portion of real fresh crab meat pulled from the claws and shell and tossed in in-house sauce, our senses were immediately invigorated to the max. For those with a lower threshold for spices, be prepared to douse the fire with loads of water but other than that, there’s really no reason to not try it.

这一道即将出现在新餐谱的鱼卵意大利面看来超浓郁,「记得趁热搅拌才能让酱汁均匀包裹在每一根面条上!一颗颗小小的鱼卵,入口后依然惊喜不断有爆浆感,滋味虽香浓但份量奇大,因此大人还是非常推荐看官们与友共享。」

Overflowing with fish roe goodness, the recently added Mentaiko Pasta packs a punch of oceanic flavours, combined with cream sauce that could get a bit heavy but still quite delicious in its own right. Once the mains were out of the way, we were looking forward to trying some of SOT’s signature desserts which we’ve heard so much about.

招牌竹炭松饼与雪糕 Signature Charcoal Waffle with One Scoop Ice Cream

SOT 招牌竹炭松饼与雪糕 (Signature Charcoal Waffle with One Scoop Ice Cream, RM17.90) 外脆里湿绵,其实是店家特地将其赋予类似牛排七分熟的概念。「味带微咸的竹炭松饼淋上枫糖浆后适时提味,采用了日本进口的面粉所制成的饼身如图可见仍带湿润度,配搭一旁的红莓、蓝莓、香蕉片与 Gelato,成全了需要甜食进补的味蕾。」

One bite into their signature charcoal waffle and you know immediately who are the stars in the plate. The salty-sweetness of their Signature Charcoal Waffle’s maple sauce and ice-cream met their match with a soft and fluffy waffle, but we felt it was the unique combination of gelato, raspberry, blueberry and banana slices that make this dish unforgettable..

以一黑一白全新口味出击的熔岩热松饼,葫芦里到底卖的是什么口味呢?

大人轻轻一切,竹炭伯爵茶薰衣草熔岩热松饼 (Charcoal Earl Grey Lavender Hotcakes, RM18.9) 里的熔岩立即汹涌而出,真是有够澎湃啊!「伯爵茶与薰衣草原来这么能搭,甜腻入心啊!幸好贴心的店家准备了微酸的蓝莓与红莓适时解甜。」

True to its reputation as the creator of the hot cakes and lava cakes trend, this Charcoal Earl Grey Lavender Hotcakes was unconventional, and we were intrigued, then smitten, by the subtle perfume of earl grey tea and lavender in the cream. The taste of this “stack of happiness” was memorable as the textures, temperatures and richness of the different flavours worked harmoniously well together, while the berries also offer more diversity in the overall flavour.

若果说竹炭伯爵茶薰衣草外形极具阳刚味,那么草莓白巧克力熔岩热松饼 (White Choco Strawberry Hotcakes, RM18.9) 就是道萌化少女心的高颜值甜点。「同样轻点即爆浆的热松饼,这回争相窜流而出的是令人尖叫的粉红熔浆,那滋味就好似大伙儿常品尝的Pocky草莓棒。」

三道滋味与形态各异的松饼,真是为大人的 SOT 之旅做出了最甜蜜的收尾啊!其实创业的过程与上述甜食颇有异曲同工之处,就好像墙上所写着的「STRESSED spelt backwards is DESSERTS」😄  大人此刻真的要反省一下咱们的廿四岁到底在干嘛 😂  (陷入沉思中…)

Not an avid fan of anything charcoal, there’s always the dainty White Choco Strawberry Hotcakes equivalent that was soft and savoury, while the strawberry lava was pleasantly sweet and just enough to tantalise, pretty much similar to munching those strawberry cream-covered Pocky sticks. Yummy!

Whatever your preferences for waffles or in life, it’s time for you to stop worry and be happy. STRESSED spelt backwards is DESSERTS, and SOT is fabulous at that. Everything will turn up fine, whether you are 24 or still reminiscing like us – those were the days…
