大人小分享自2014年起,前身为盛贸酒店的 Hotel Jen 便陆续於亚太区九个主要门户城市十家酒店 (香港、布里斯班、槟城、新山、马尼拉、马尔代夫、北京、沈阳及新加坡) 重塑其酒店品牌。Hotel Jen(今旅)品牌的灵感源于虚拟人物 Jen:她是一位热爱生活,喜欢探险、旅行和发现的专业酒店经营者。

It was TGIF and Oktoberfest two-in-one on October 14, as we joined Jen and her team from Hotel Jen Puteri Harbour for an evening of fun, food and of course beers! And guess what? Lady luck was also smiling as 2 of our editors were also proud winners of a 3D/2N hotel room stay and F&B dining vouchers at the SkyBar, Bar & Restaurant. What luck!

Meet Jen, our friend and host (from Hotel Jen by Shangri-La) that simply adores life, fun, adventure and discovery since 2014, whom we had the pleasure to experience up close and personal the one-of-a-kind “Jen” hospitality at her home in China (Hotel Jen Upper East Beijing) and Singapore (Hotel Jen Orchard Gateway). With her homes located in some of the best locations across Asia Pacific, Jen is always ready to welcome anyone with open arms, whether you are in Hong Kong, Brisbane, Manila, Maldives, Beijing, Shenyang, Singapore or nearer to home (Penang and Johor). We simply could not forget “That Jen Feeling” from our previous visits, so when Jen come calling to join her for dinner to try out some of her latest French and Italian-inspired creations at SkyBar (even before we could utilise our vouchers), we would be lying if we weren’t in the least bit excited to have been invited for some cool chillout and rooftop dining with a view!

先来一颗餐前面包开启「胃」知的美食之旅吧!这可是每道主食上桌前的必备品,可选涂上一抹牛油、美乃滋或橄榄油引出面包的淡香口感。「大人的经验之谈!待餐时虽已有些饿意,但千万别慌了阵脚吃下太多淀粉哦,否则待会儿可是会后悔莫及啊!」

There is always the risk of stuffing ourselves with these delightful bread-based appetisers, but that doesn’t mеаn we have to skip them altogether. Mark our words, consume in moderation, or you will miss out a lot more if you are not careful LOL!

前菜 – 意式生腌章鱼片 Octopus Carpaccio

第一道开胃前菜意式生腌章鱼片 (Octopus Carpaccio) 上桌了!「以特级初榨橄榄油腌渍、切至薄若蝉翼的章鱼片更易于咀嚼。犹如食用生鱼片的鲜口感搭上咸酸宜人的调酱,轻松完成了开胃的使命!」

If this starter is anything to go by, we know we are in for a real treat. Marinated & served with broiled pimientos (capsicum) and Spanish anchovies, we were amazed by how these thinly sliced Octopus Carpaccio dressed with extra virgin olive oil can be this appetising.

前菜 – 香煎蟹肉馅饼 Crab Cake

对螃蟹情有独钟却又不想大费周章食用蟹肉的饕客们,这一道以蟹钳肉制成的香煎蟹肉馅饼  (Crab Cake) 必能夺你欢心!「内馅里的蟹肉非常扎实!虽为酥炸物却因搭配了酸甜口味的芒果沙沙酱而巧妙解腻。」

In comparison with the previous dish, the Crab Cake is especially value-for-money and quite a technical feat to pull as the crab patties made from claw meat within has to stay moist while the outer skin has to be deep fried dry. Served with mango salsa and aioli, a munch on the skin release a toothsome meat flavour that many covet, and somehow pairs well with the classic French garlic mayonnaise originated from Southern France. This is highly recommended.

前菜 – 菠菜沙拉 Spinach Salad

前菜总不能缺少食蔬啊!来份菠菜沙拉 (Spinach Salad) 吧!以香醋及橄榄油拌菠菜、菌菇与牛舌,「新鲜的当季食蔬气息,微苦滋味和微酸酱汁匀拌后,顺势与菌菇的顺滑口感互补。」

Sensing that our main course dinner is sure to leave us feeling full to the brim, Jen offered us some tummy respite with the Spinach Salad with fresh baby spinach leaves tossed with a dressing made of balsamic vinegar & olive oil. Accompanied with slow cooked ox tongue, we can sit back for now and enjoy without having to worry too much about calories.

前菜 – 鸡尾酒虾 Prawn Cocktail

「以摄氏63度慢烹90分钟的水煮蛋,瞧瞧那若隐若现的蛋黄,真是让人垂涎欲滴啊!」搭配了口感沁凉的水煮鲜虾与鳄梨酱的鸡尾酒虾 (Prawn Cocktail) 滋味协调,入口清爽!

How about wrapping up our starter with some Prawn Cocktail that comes with gently poached freshwater prawns in classic cocktail dressing and guacamole avocado pulp (Mexican style avocado mash)? Served with soft poached egg gently cooked in a water bath for 90 minutes at temperature 63 degrees Celsius, what more could we ask for?

主食 – 香烤鸭胸 Duck Breast

品尝了四道开胃前菜后,味蕾正式宣告觉醒!第一道端上的主食即为香烤鸭胸 (Duck Breast) 「皮衣略脆,色彩微红嫩的肉质富嚼劲无异味,越嚼越香、越嚼越有滋味。」

Inspired from Canard Au l’orange lazed, this classic French pan roasted Duck Breast is served pink and packs a lot more flavour than the usual duck varieties, accompanied with seasonal glazed vegetables and potato puree. C’est délicieux!

主食 – 澳洲谷饲安格斯沙朗牛排 Angus Sirloin

以法国海盐腌渍的澳洲谷饲安格斯沙朗牛排 (Angus Sirloin) 蘸上砂劳越胡椒酱与核桃南瓜菜泥,「摆盘简约与只以海盐入味的牛肉的意境相似,尝的尽是肉质本身的嚼劲甘美。不妨添上些许酱汁挑战另一番滋味。」

Grain-fed for 80 days before being slaughtered, the Australian Angus Sirloin is one of the most popular Prime Cuts of beef we had of late. Seasoned with Fleur de sel (French sea salt) and cracked Sarawak peppercorn and grilled using lava stone grill and finished in the hot oven according to our desired doneness, the sirloin was moderately tender with pleasant yielding, while the increase in chewiness made for one of the most visceral carnivorous experience. Accompanied with Butternut Squash puree (a type of long shaped pumpkin), vine tomatoes and mushroom confit (mushroom cooked in infused oil) elevating the flavour by adding layers to the taste with every mouthful.

主食 – 烤鸡 Half Roasted Chicken

色香味十足的烤鸡 (Half Roasted Chicken) 原来是以摄氏八十度的盐水温加上草药经24小时慢烹熬煮,上桌前再以香橙与龙蒿轻刷皮衣再送入烤箱烤炙。「皮衣口感完美,内里鲜甜好锁汁!一口鸡肉一口烤食蔬,嘴里尽是“烤”香啊!」

This is one dish that never fails to satisfy our tummies, with the half chicken brine in salted water with herbs for 24 hours before being slow-cooked in a water bath of 80 degrees Celcius. Just before serving, orange and tarragon glaze is brushed to the surface of the chicken and finished in the hot oven to obtain the slightly charred roasted effect. Accompanied by butter poached Gourmet potato (baby potatoes slowly cooked in butter and herbs) and grilled vegetables, the fully Half Roasted Chicken is thorough cooked and fully absorbed the essence of everything that comes with it.

主食 – 龙虾意式马铃薯饺子 Lobster Gnocchi

大人真心超爱这一道,微焦香的意式马铃薯饺子与龙虾肉 (Lobster Gnocchi) 、牛肝菌菇的搭配实在让人无法忘怀!「有着松露香轻拌饺子其中,弹牙鲜甜的龙虾肉、牛肝菌菇的异香加上爽脆的竹笋交织唇齿间,味觉再次被惊艳了!」

We could never always figure out what Jen had up her sleeves, but with huge chunks of lobster meat being sautéed with porcini mushrooms and potato dumplings accompanied with glazed baby vegetables, how could we say no to this Lobster Gnocchi? Thanks Jen, this is simply “clawesome”!

主食 – 龙虾意式面卷 Lobster Cannelloni

与一般意式面条有异,这道龙虾意式面卷 (Lobster Cannelloni) 大人还是第一次在本地尝鲜,Sky Bar 将颇受欢迎的龙虾与蟹肉卷入面中,再将之浴於清香酱汁里,「大人用肉眼看还以为将会是一道酱汁极其浓郁的佳肴呢!其实这道面卷滋味清甜,整体毫无过多的调味缀饰,搭配顺滑面卷粉皮吃多了也不觉腻。」

OMG, yet more lobsters but available as a pasta option dish, with both lobster and crab meat are rolled in pasta sheet and served with a shellfish-based creamy sauce that complements the firm lobster flesh quite well. The cylindrical-shaped pasta was sufficiently tender and moist, with each starchy grain infused with a concentrated seafood flavour from the bisque base, a real delight to eat.

主食 –  七彩鳕鱼 Cod Fish

浴在鲜美汤汁中的七彩鳕鱼 (Cod Fish),真是绝了!大人尝了后立即占为己有!「无比鲜嫩的鳕鱼肉与智利青蚝搭配汤汁简直和谐,大人尤其钟爱那处理得异常趣致可爱的七彩蔬菜丸子!想当然这道菜的结局必然是一滴不剩。」

Gently poached and served in a tomato consommé based broth, the Cod Fish is well-executed and retained its original flavour and was soft to the bite. Served with Chilean mussels and Parisienne vegetables (vegetables cut into the shape of small balls). We would recommend this to any fish lovers out there.

甜点 – 提拉米苏 Tiramisu & 焦糖布丁 Crème Brûlée

大人每一回到 Hotel Jen 都得品尝她们家最让人无法抵挡的甜品提拉米苏 (Tiramisu) 与焦糖布丁 (Crème Brûlée),这次当然也不例外!「造型有趣的 Tiramisu 盆栽里有些许微酸芝士提味,大人没一会儿就把“泥土”给挖掘光了啊~ 挚爱 Crème Brûlée 同样没让大人失望,微焦表层与醇滑浓郁的奶香凝练成如此诱人的甜点,完美终结今夜的美好。」

一口气尝完如此多样化的精致佳肴,实在太心满意足!之前还在犹豫如何享用手持的那张美食奖券呢,大人此刻心里有数啦 😄 !

For dessert with a fun twist, look no further than this classic Italian dessert Tiramisu made of whipped egg and mascarpone cheese, layered alternately with espresso soaked “lady’s finger biscuit”, topped with chocolate powder and fresh berries. The best part, it’s served in a flower pot–like container. While we still marvel at the floral presentation, the Crème Brûlée here literally transports us to Southern France for a taste of lavender. Made of cream and egg with the addition of lavender extract, whose recipe resembles the traditional Catalan dessert (Crema Cataluna), with caramelised sugar on top of the cooked cream.

As with most dinner hosted by Jen, the portions are generous (though what you see is really what you get) and we did leave bursting at the belt though, so we might just want to get a few more friends to share in our good fortune when redeeming our vouchers next!
