大人为精致的法式精品蛋糕下了一个注解:可远观、可近赏、无不叹惊艳,堪称最精致小巧的美食艺术品。

会在点餐时用上挣扎这字眼,原来除了食物口味之外,还关乎其外表。请相信我,看官们要是一走入位于新山茂奥斯汀小巴黎(Mount Austin)区内的 Patisserie De Charme,站在那蛋糕柜前肯定也会立刻变得如大人般举棋不定啊!机率有多大?简直百试百灵。

Taking a sensory trip to France is as easy as stepping into this artisanal patisserie.

Set against the vibrant backdrop of Taman Mount Austin, Patisserie De Charme (PDC) offers an excellent contrast to the scenery with its quaint bakery, which has been pleasing palates with their contemporary eclairs ever since their opening on 27 March 2015.

巴黎街角的小店风貌,一枝独秀的主角,始终离不开 - 那讲究口感、层次而又炫丽多姿的法式精品蛋糕。自2015年3月27日拉开法式蛋糕序幕以来,Eric  Eunice 一直以其精湛手艺深驻大人与密探之甜蜜心房。每一回的柜前挣扎,在入口之际必有最真诚的滋味回报。

Taking a sensory trip to France is as easy as stepping into this artisanal patisserie. Helmed by Eric and Eunice, PDC was born from their desire to present beautifully crafted eclairs and gateau to Johoreans, by revisiting the classics of French pastry and applying their contemporary knowledge to create modern versions of traditional sweet treats. Their talent for pastry will certainly bring us on an exploration of various flavours, textures and sensations. – something no one has really done here yet.

像不像女士们挑选精致珠宝时的柜子?没错,此时此刻的大人也在挑选自个儿的心头好啊!每逢到访 Patisserie De Charme 总会发现他们又有新作让大人再度来回跺步,陷入无尽的美食艺术氛围里。这儿的女主人,对于欲想鉴赏其件件蛋糕艺术品的访客总是耐心地解释内里滋味,毫不松懈。偷偷告诉各位,大人在今年的寿辰时有幸获同僚们厚爱,品尝了近期才推出的Whole cake 当生日蛋糕呢!超幸福~「简单来说,Whole cake 就是橱柜里放大版的艺术品!因为每一种法式蛋糕的材料皆大不相同,多达16种口味的价格各异并需在三天前预订,所以还是有劳各位移步至此亲挑吧~」

PDC‘s artistically handcrafted desserts come in many unique flavours and are as gorgeous to gaze upon as they are delightful to eat. Every single piece of cake at PDC is exquisite, both in aesthetics and taste. Whether your inclination is classic or modern, these artisans offer fresh and vibrantly flavourful pastries that are sure to hit your sweet spot. In fact, we recently had the Opera Whole Cake for our birthday celebrations, which also comes in 16 other flavours, but do allow for 3 days advanced order for your perfect party!

或许初次到访的看官们或许会惊讶「法式精品蛋糕怎么都那么小巧,价格却那么令人咋舌?与在旁的 Carrot Cake 可谓相距甚远啊!」Eunice 解释由于每式每样的法国甜点备料 (法文为 mise-en-place) 做工既繁琐耗时又讲究精细,加上每一式的蛋糕材料 (部分原料只能从海外进口) 与市面上大量生产的普通奶油蛋糕皆不尽相同,因此在备料上无法一次过完成所有步骤,需层层叠叠地进行“组装”后再做最后妆点,「我们在柜里所看见的每一份艺术品原来工序如此繁复,果然是用时间才能酝酿出的美味,真是少一分用心都不行啊!」看看大人这回所挑的四件艺术品,件件姿态迥异却又华丽地不敢冒犯啊~

There is no denying the appeal of a classic French dessert, typically small yet decadent enough to provide the perfect bite (if you compare to the carrot cake beside), but a lot of those desserts we shove into our mouths without any second thoughts took a lot of work to make, and that is a massive understatement. In the eyes of Eunice, every creation is like a work of art and a labour of love, from the preparation to the choice of ingredients (mise-en-place), and many of our favourites take multiple steps to make, some take hours even days. Even though most items at PDC are small in serving, they are substantial in taste and satisfaction, surely everyone will have a sweet bond over these treats.

The Square

有颗迷你马卡龙缀顶的 The Square (Caramel Mousse with Pineapple Marmalade, Chocolate Sponge, Madeline Sponge and Coated with Nutty White Chocolate and Topped with Pineapple Jelly, RM14.80) 口味极具层次感,「入口后的微酸,接踵而来的甜,出其不意的焦糖慕斯与裹在白巧克力外身的豆子,嫩滑中带有的脆粒口感非常有冲击力,各司其职谁也抢不了谁的风头啊!」

Presenting one of PDC’s latest creation that is The Square by name, but certainly not by taste. Made of caramel mousse with pineapple marmalade using a double layer of chocolate and Madeline sponge coated with nutty white chocolate, the “frosting” is perfectly smooth and has no overwhelming creaminess. The sponge cake is moist and somewhat fluffy which we quite enjoyed. Topped with Pineapple Jelly and crowned with a mini macaron, this is a highly recommended flavour to any sweet tooths out there!

The Charme of Black

看官们可能观其外表,会立即作出此为巧克力蛋糕的联想吧?名为 The Charme of Black (Light Coffee Mascarpone Mousse with Coffee Jelly, Walnut Sponge and Dark Chocolate Glaze, RM16.80) 作工其实非常繁复,单是咖啡、核桃等的细节处理就逾24小时了!「大人还得知原来坚持品质的 Patisserie De Charme 所使用的巧克力并非一般的 Compound Chocolate,而是采用了含超过32%真可可脂所制成的调温巧克力 Couverture Chocolate。」划下褐色外衣后质感竟如此绵密,咬下之际还能尝出核桃的颗粒感,甜中带咖啡苦的滋味还真令人爱不释口。

OMG, this sweet temptation which is aptly named The Charme of Black is certainly working its magic and charm on us even before we begin tucking in. The heavenly light coffee mascarpone mousse with coffee jelly in walnut sponge gives an element of surprise to the cake as we took a bite. And the fact that the cake doesn’t taste too sweet even with the dark chocolate glaze suggests that the chefs have done an excellent job of balancing the flavours of chocolate and coffee. In fact, the whole preparation took over 24 hours, using no ordinary compound chocolate but high-quality Couverture Chocolate with over 32% cocoa butter to gives it more sheen and a creamy mellow flavour. That’s what we call a bittersweet symphony with lip-smacking goodness!

Emerald

多令人怦然心动的翡翠色法式甜点啊!这可是大人一进门就不停打量的 Emerald (Pistachio and Strawberry Mascarpone Mousse covered with Pistachio Glaze and bottomed with Sable Cookies, RM13.80)!「外表异常诱人的 Emerald 乃由100%法国进口的纯开心果酱所制成,滋味非常浓郁。以开心果酱与草莓夹层的内馅再缀以金箔浆果,送入口前还得三思一番,实在太精致不舍得伤害其身。底座的奶油酥饼,毫无意外地将顶层的软嫩提升了一个层次。」

The Emerald is easily one of those desserts that we couldn’t take our eyes off since our arrival, one that is so effortlessly elegant that we wonder why we hadn’t thought of it sooner ourselves. Again, the chef has done a perfect job in balancing the flavours of pistachio, and other ingredients that make up the smooth, moist and light strawberry mascarpone mousse. Add to the gold foil coated berries and sable cookies in tandem, this has certainly rendered us speechless after each bite. Wow…..

店内近期的人气法式甜点莫过于 Kampung Breath (Joconde Sponge with Red Bean, Gula Melaka Creameux and Coconut Mousse and covered with Red Chocolate Glaze, RM12.80),闻其名想必与本土食材有关,果然不出大人所料!「这款向红豆冰致敬的 Kampung Breath 滋味与 Ais Kacang 有异曲同工之处,看似红亮的外观其实异常软嫩,内馅的杏仁海绵蛋糕与椰丝香、马六甲椰糖各自施展浑身解数诱惑大人的味蕾,难怪能成为店内人气之选。大人原以为顶部那一抹与冰砂形似的竹炭口感会偏脆,想不到竟然是微波海绵蛋糕的口感,好神奇!」

Essentially embodying the east-meets-west culinary theme, PDC infuses a number of special baking techniques into this classic French Joconde sponge, using local favourite ingredients such as red beans, Gula Melaka and coconut, covered with a velvety red chocolate glaze to lend a haute-couture touch to our traditional ice-kacang into this decadent creation that felt like a fresh breath. We beg your pardon, it’s Kampung Breath to be exact. How ingenious!

拿铁 Hazelnut Latte & Green Tea Latte

喜欢意利咖啡(illy coffee) 的看官们在享用精致法式甜点的同时,不妨点上一杯拿铁来份双重诱惑!「好爱那杯绿茶拿铁啊!比例份量拿捏得恰如其分,清甜淡雅宜人。」

The perfect companion to any kind of dessert, we couldn’t resist order an “illy” cuppa to add value to our experience, as PDC’s also offers coffees and other beverages that are refreshing and works well with our pastries. Somehow, they taste just right.

自制番茄鸡肉派 Baked Tomato Chicken Pie

大人实在好羡慕店老板夫妻俩,自己爱吃的脆饼派自己做!看看这自制番茄鸡肉派 (Baked Tomato Chicken Pie, RM12) 内馅,颗颗分明的鸡肉块经过腌制后再微烤,后再加入迷迭香加烤才炒至收汁,难怪切开后飘香处处啊!「吃得出用心的饼派!非常值得一试!没时间午餐?不如买一个饼派回办公室以备不时之需吧!」除了大人所尝的鸡肉派,还有以下口味哦!

Looking for something savoury to balance the sweetness from our earlier indulgence, the Baked Tomato Chicken Pie did not disappoint, with its flaky buttery melt-in-your-mouth pastry. The gateaux basque comes apart easily to reveal a creamy chicken and tomato fillings. Unlike the elegant eclairs earlier, this pie was hearty and comforting, something we don’t expect to have but end up loving and finishing it anyway. For those who might be into tomatoes, there are other cheesy and curry options available too.
