近年来，新山早已由过境之城华丽变身为渐受瞩目的南方都会，而道地的柔佛州美食也是世界各地的游客专程前来的一大原因。以舒适高雅的住宿环境与便捷的地点而闻名的新山星级酒店DoubleTree by Hilton Johor Bahru，其酒店内附设的餐厅 Makan Kitchen 早已紧锁国内外老饕们的胃，单闻以马来语Makan为名就知里头绝对离不开丰富多变的道地美食。
非常感激 DoubleTree by Hilton Johor Bahru 此次的斋戒月自助餐邀约，只见现场被巧妙设计地充满中东风味，迷你金字塔、仿真度颇高的骆驼，加上服务人员皆换上中东造型的服饰，大人此时就好像打开了任意门来到了中东啊（惊）！
Johor Bahru today is a bustling hive of activity, where visitors flock to our city not just for the rich and enthralling local offerings, but also the melting pot of culture that shapes our colourful identity. In the land of good food, we explore high and low in Johor Bahru for the seasonal Ramadan buffets where authentic Malaysian flavours and international delicacies co-exist, and we found them right in the heart of the city centre, where Makan is the game and, and Makan Kitchen is the name!
As usual, Makan Kitchen @ Doubletree by Hilton Johor Bahru has all the crowd pleasing selections that you expect of an 4-star rated international hotel, but what amazed us this time round is the creative fusion inspired by Malaysians’ growing love for the subtlety complex flavors of Middle Eastern cuisine. Get a cue from the mini Pyramid placed just outside the restaurant entrance, and a host of service staff smartly dressed in traditional Middle Eastern costume, you can be forgiven to think you have landed in Jeddah rather than Johor Bahru. Once again, thank you Doubletree by Hilton JB for having us, and feel free to join us on this magic carpet ride through a Middle Eastern themed gastronomical journey. Ready? Get set, JOM!
以本土道地美食著称的Makan Kitchen, 融合了本地各大种族的美味密码，餐厅内的开放式美食分布区域显而易见，斋戒月期间更是加入了多道正宗的马来前菜佳节料理、泰国与印尼的正宗美食及中东餐点，让原本已经琳琅满目的食物选择添至百道以上，更见锦上添花。
The “Festive Flavours” buffet extravaganza showcases more than 100 eclectic mix of Arabic, Western, and Chinese dishes, while the numerous live stations that dishes out piping hot and fresh food the entire duration of the buffet, gave us another good reason why having our buka puasa at Makan Kitchen is a good idea. The buffet dinner also features a live traditional Ghazal performance throughout the fasting month.

不得不提这现场歌唱功力一级棒的乐队！除了为了迎合佳节的马来名曲，漂亮的主唱还演绎了多国经典歌曲，要不是亲耳听见，大人还以为现场有几组乐队在轮流演出呢！有了驻唱乐队的迷人歌声缭绕着餐厅，让人不禁更沉醉在此时此刻的欢聚气氛啊！（大人还记得餐后临走前，乐队们还很亲切地向大人微笑招手 😀 ）
Melodious tunes from the Ghazal group- a traditional musical genre steeped with poetry fills the air serenading the hearts of diners. The gong-beating ceremony is held every evening to signal that it is time to break fast and adds to the lively spirit of Ramadan, uplifting the joys of children, families, friends and colleagues coming together.
Our main stop for any buffets is the hot dishes (other than desserts) so we will usually go easy at the Ulam-ulaman section. We took a bit of each for sampling and found each appetiser to be palatable and passable. Now let’s move on to the hot dishes, and we really mean “hot” (be warned).
印度厨房 Indian Kitchen
The exotic Indian beckons next, with crispy naan bread going really well with a host of mutton, beef and chicken curries, but what caught our attention was the deeply marinated Chicken Sharwarma flavored with a savory yogurt sauce, so tender in every bite while slightly charred at certain edges to deliver some burnt, smoky aroma. Heavenly!
马来式厨房 Malay Kitchen
The hot food section at the Malay Kitchen is worth gorging on. Most dishes are flavourful and prepared well. Spicy, rich and tasty as they should be, and most importantly, the ingredients are fresh! We simply fell in love with the grilled fishes, which were thick, fresh and lovely with the housemade sauces.
Also found lurking in the grill section was the satays and a variety of ketupats and lemangs. These paired well with the sweet peanut sauce and savoury rendangs. As usual, the satays were meaty, well marinated and not too oily.
中式厨房 Chinese Kitchen
Let’s not forget the Chinese in us. Located on the leftmost section, you can spot steaming fresh dim sum and all sorts of traditional Chinese dishes in this section of the buffet; a safe bet if you want something mild and settling on the stomach after taking a “trip to India” and back, with all the heavily flavoured spices during the buffet.
中东美食 Carving Station
此次以中东色彩为餐饮主题的Makan Kitchen，怎能少了中东料理这主角呢？让大人赞不绝口的就是主厨Chef Zul Aman Mohamad所推荐的摩洛哥式烤全羊与黄姜饭！外观与一般烤肉无异的香烤肉身，却以各式草本香料腌制多时的鲜嫩羊肉征服味蕾，放入口中后羊肉一丝丝散开，超好味！必尝！
As we did our photography rounds, the carnivore in us already had our eyes (and stomach) set on the Moroccan style Harissa-Marinated Lamb. According to Chef de Cuisine, Zul, the lamb was marinated overnight in a secret blend of herbs and spices, and carefully roasted over 3 hours until the meat is perfectly succulent before being carved on the spot for diners. As soon as everyone buka puasa, slices of roast lamb and rolls of fluffy roti jala drenched in thick dhall curry was the first thing one of our editors piled upon his plate!

Chicken and Lamb Murtabak were also sighted and looked good among the spread but we will give it a miss this time round. Why would you want to waste space in your tummy when you can have something else that’s worth more the calories haha?
甜品厨房 Dessert Kitchen
Makan Kitchen的甜点区就在整个餐厅的中心点，不论看官们身处何方绝对不可能错过这甜蜜国度，大人觉得有必要用“色彩斑斓”才足以形容眼前所见。十指都算不完的甜点，每样浅尝可能得多拥有两个胃才能满足啊～ 有鉴于此，大人决定“专攻”！
Save some room for dessert, and the station is situated right at the center of all attractions, for obvious reasons. Local crowd favourites such as Kueh Ketayap, Sri Muks and (YES!) Kueh Lapis can be spotted here, in fact too many to mention but all delicious and hard to resist. For more sweet treat, indulge in delectable French pastries, chocolate fountains with condiments and fresh-cut fruits.
We were seriously stuffed by now, but how could we possibly resist this rich flesh deep-fried durian fritters. It is somewhat oily and sinful, but you already know that when you walk into any Ramadan buffet, right?
吃完炸榴莲，不妨来份土耳其冰淇淋来缓缓热气！桶子里备有三种口味：Raisin 葡萄干、Honey 蜜糖与 Pomegranate 红石榴，可以任选其一或混搭口味。土耳其冰淇淋最有趣的部分应该就是那长长的冰淇淋勺子，若站在远处没有往桶子内张望，应该不晓得里头竟藏有老少咸宜的饭后甜点。甚为解腻的红石榴口味，最得大人心哟～
A permanent feature here you can’t possibly missed, just before the exit is the popular Turkish ice cream stall. Offering 3 exotic flavours, coupled with plenty of humour (if you can see the lighter side, of course), grabbing your thick and chewy Raisin, Honey or Pomegranate-flavoured “dondurma” can be a real handful, but if you have space for only one dessert, this rich and creamy indulgence should be your choice.
