Far from being scary, if a giant, blue monster has been your childhood BFF, and like us, you have eaten these dry noodles straight out of the packet, chances are that kids today are calling you “uncle” or “auntie” already! 😂

For 48 years, MAMEE noodles have remained close to the hearts of countless Malaysians, instantly bringing back fond childhood memories. Far from ageing gracefully, the furry blue MAMEE Monster has managed to keep it fresh, youthful and “glowing” by the day!

Is MAMEE “Made in Malacca”? Well, from the gigantic welcome signboard on a pedestrian bridge to the Mamee-Double Decker (M) Bhd’s factory being located in Ayer Keroh, we are not surprised the brand has made the state its unofficial hometown. Since early this year, the word is buzzing that our familiar MAMEE Monster is in talks for a secret makeover, complete with a brand new look to (literally) spice things up. To date, only a privileged few have actually seen it, let alone taste it!

As if Samyang and the spicy food trend of 2019 are not enough, the folks at Monster Lab has come up with MAMEE Daebak Ghost Pepper noodles in collaboration with Korea’s Shinsegae. Sold in limited quantities at 7-Eleven stores, there’s hardly any promotion apart from the #GhostPepperChallenge hashtag which went viral on social media. Our mouths began calling for the fire brigade after about 20 seconds. Trust us, this brutal aftertaste packs more than a few punches and is definitely not for the faint-hearted!

Since when have our childhood after-meal snack become the main course now? When MAMEE Monster meets The Manhattan Fish Market, of course! Look MA! It’s MEE in the making!

Having ply the route along Lebuh Ayer Keroh on many occasions, it didn’t occur to us that we would one day be stepping into MAMEE‘s HQ to see where and how the food is made, and find out just how much work goes into producing one of the most favoured snacks of our office pantry!

First incepted as Pacific Food Products Sdn Bhd in 1971 with the release Lucky Instant Noodle, it’s the subsequent launch of MAMEE Monster Noodles in 1974 that proved to be an instant hit. From its humble beginning from a small manufacturing plant to a full-fledged food company employing 2,000 staff, the makers of MAMEE now makes more than 50 different products, including the hugely popular Mister Potato, Nutrigen and Double Decker, and export to over 100 countries worldwide. In case you haven’t noticed, Mister Potato has been widely seen on the digital boards in Premier League matches at Old Trafford following the signing of a new sponsorship deal from 2011-2014. Some of us managed to MU-nch away happily watching the red devils in action, while others even caught Manchester United up close and personal during their Far East tour a year later! How lucky!

Snack foods are often thought of as unhealthy, full of artificial flavours and ingredients, the producers of MAMEE have made it their mission to change perceptions of their products. Being compliant and awarded HACCP (Hazard Analysis and Critical Control Point), Halal, ISO9001 and ISO22000 certifications, the company has also consistently garnered numerous awards. These include the Frost & Sullivan Award for Best Home-Grown Packaged Food Company (2013 & 2014), and a Putra Brand Award under the Foodstuff Category (2014). To top it all, MAMEE has even opened its factories and showing visitors the step-by-step production process for their snacks and instant noodles. WOW!

 

Phase 1-4: Mixing, Rolling, Slitting & Steaming

Open to the public (read: students and corporate groups) every Mondays to Thursdays from 10am to 4pm, our guided tour took us to the first section where the flour was mixed to form the dough for the noodles. The raw ingredient is then piped to phase two where the dough is formed into a long, continuous sheet and passing through the rollers to standardise its thickness before cutting. In the next phase, we watched as a machine sliced the dough into its noodle form. The dough is then steamed to maintain the springiness of the noodles, kinda ending up half-cooked to maintain its shape and preventing it from clumping together again.

 

Phase 5-8: Pulling, Cutting, Frying, Cooling

The half-cooked noodles are then pulled before being cut into the noodle cakes, the form readily recognisable as instant noodles. Under close supervision, two staff are always on duty to ensure the noodle cakes are properly in place on the compartmentalised conveyor belt before the noodles are fried in palm oil. The noodle cakes are then put through a cooler to dry the noodles of any excess oil.

 

Phase 9: Packing

At the final phase, the noodles are packed into their respective containers. Each individual packet noodle comes with seasoning, while a fork is placed along with the sauce for the cup noodles. The packed noodles also pass through two metal detectors before being packaged, to ensure that there are no metal pieces within the noodle cakes. This is also the phase where quality control kicks in, and careful inspection is performed before the packets are sealed and packed.

At a rate of 56,000 noodle cakes per hour and a monthly export volume of over 65 million both locally and overseas, we are very impressed at the speed, accuracy and efficiency of the entire production lines to meet the needs and cravings of MAMEE fans worldwide!

A (jonker) walk down noodle nostalgia

A trip to Malacca is never complete without a visit to its famous Jonker Street, famous for its weekend night market and also a haven for holidaymakers and bargain hunters like us. First opened in 2013 and occupying two adjoining shophouses, there’s no way one could miss its striking orange facade along Jalan Hang Jebat. By hook or by crook, we had to come for a visit to MAMEE JONKER HOUSE, our childhood snack “factory”. No prize for guessing who’s on hand to greet us at the entrance and we could see how animated and excited some of the visitors are before us. We somehow couldn’t take our eyes off the cute, miniature MAMEE Monsters model in action, as if to remind us on the entire manufacturing process we had witnessed moments earlier.

Monday – Friday 10am – 5pm; Saturday – Sunday 10am – 7pm

Apart from being the place to get everything MAMEE, from the official MAMEE Monster merchandise to the World of Good Taste snacks that come in a mind-boggling selection of flavours! There’s also a MAMEE Cafe, as well as two in-house workshops – Lil Monster Kitchen where we can customise cup noodles, and Noodle Doodle that let us make our very own MAMEE snack noodles from scratch!

 

MAMEE Cafe

At the back of Mamee Jonker House hides The MAMEE Cafe, a HALAL restaurant that serves up classic Malaysian favourites like Hainanese Chicken Rice, Mamee Mee Goreng Mamak, Lemak Lontong Noodles, Nasi Lemak Noodles, Creamy Tomyum Noodles, Cendol and many more. The Signature Chicken Rice guaranteed legit tender Hainanese-style chicken with rice balls that look provocatively large and tasty. This probably explains why the dish is on nearly every table. The Signature Curry Laksa is also a showcase of their noodle creations, but if you think it is too spicy for your liking, there’s always the rich, creamy Ice Cendol to come to your rescue.

 

Lil‘ Monster Kitchen Workshop

Our first MAMEE workshop after lunch took us to the Lil Monster Kitchen to let us get hands-on experience with the noodle manufacturing process, just like how it’s made in the factory – every step from the preparation of the dough, kneaded, cut, steamed, fried to crisp and packaged. To avoid disappointment for walk-ins, we highly recommend booking your workshop spots in advance to enjoy more considerable savings with the Premium Experience package, which would otherwise cost RM50 per person on its own. With designated seating, our personal apron, chef hat and plain packaging which allows us to personalise our own MAMEE noodle snack using colourful markers, we are all set and ready to go! Every step involved is an exact mirror of the same process MAMEE uses on a large scale in their factories. Besides creating the same good taste, we will also learn more about the ingredients used in creating the snack. After watching a video for an understanding of how the whole process would be, which looks effortless. Then, it was our turn to get busy. Admittedly, what appears the most straightforward task of mixing and kneading the dough with our hands turns out to be the toughest job that actually burns off the excess calories from lunch earlier LOL!

After a resting period of 20 minutes, it’s time to put the dough sheet through the noodle slitter, before allowing it to steam for a further 8 minutes. After weighing the noodles to be precisely 38 grammes, we finally get to season our noodles with a unique concoction of chicken essence, before frying them in healthy Carotino palm oil for another 38 seconds.

Hey presto, presenting our very own MAMEE noodle snack that’s 95% handmade, 100% original! After a final hot boil bath, our creation is ready to be sealed and hit the market. Packed with Omega 3, Vitamin A & E and 6 different types of Fatty Acids with NO artificial colouring and preservatives, the taste is as good as the real thing!

 

Noodle Doodle Workshop 

If once is not enough, our second workshop allows us to exercise our creativity in designing our own cup and packed with noodles, as well as condiments of our choice. Feeling high and dry from your creative exertions earlier? Just take a peek at the cup noodles wall for some much-needed inspiration.

Now comes the easy part, simply choose from over 10 condiments and dried ingredients, have it sealed and bring home an entirely customised batch of cup noodles. Bear in mind though as the packing was not done in a clean-room-environment like the production facility, this method of packing lets the noodles be kept for only two weeks. Being the only one of its kind, we decided it shall not be consumed and be accorded immortality status in our office!

MAMEE is a home-grown icon that has been with many Malaysian families and us for decades. While it’s nice to look back to the past, the recent makeover and future look even brighter for everyone’s favourite MAMEE Monster. Time to say #Kthxbye for now, but we’ll be back sooner than we think!
