谁会想到当年每天的必行之路,今日会成为城中热门食尚区呢?是的,这条街印刻着大人六年的青葱岁月记忆,岸边仍然可见弄潮儿嬉戏,一旁的校园依旧充满朝气,不同的是这里多了一处享用精致餐饮的聚合点 – The ViBe @ Vantage Bay

刚於12月10日盛大开幕的 The ViBe @ Vantage Bay 里其实蕴藏着4家隶属创意美食集团 Rainbow Cottage 旗下的餐饮品牌:风格迥然不同的食尚餐馆与咖啡馆 – Brunch2Wine, Bottle & Glass, The Little Island 小槟岛 Wheat & Wit Bakery & Cafe。任凭您平日多没觅食方向感,想要错失这位于边界线上的美食境地,难度甚高啊!

Taking a leisurely drive along Johor Bahru waterfront reminds us of our good old high school days back in Stulang Laut, and we are pleasantly surprised to discover the development that is gradually taking shape at Vantage Bay. It’s heartening to note that Johor’s capital city and the main waterfront gateway facing Singapore is well on the way to rebranding itself from a chaotic border town into a more liveable destination with worthwhile attractions, shopping and party zones, hip galleries and upscale restaurants.

If you fancy some unique dining concepts and sitting watching the world go by in a waterfront setting, then look no further than The ViBe @ Vantage Bay which recently officially open its doors on 10 December to much fanfare and rave reviews. With a myriad of exciting dining and entertainment establishments under the Rainbow Cottage Group surrounding an alfresco area, dotted with high tables and bar stools, as well as a small stage at one end of the lawn for live shows, it’s really hard to miss the interesting vibes that this former sales gallery of Vantage Bay along Jalan Ibrahim Sultan can bring.

午后,大人依循着味蕾的指示来到了 B2W: Brunch2Wine。眼前这片摩登典雅的绿景与之前大人所光顾过的百合花园旧馆还真是截然不同啊!全新的餐饮室内设计概念,尽心地为美好而专注。

Having established itself as one of Johor Bahru’s top fine dining restaurants, B2W: Brunch2Wine marked its 2 years in with a total revamp and moved from vibrant Taman Molek to The ViBe @ Vantage Bay.

浑然天成的高雅之姿,这儿的主人将空间与美食的品味设於高级精致餐饮 Fine Dining 等级,「太优雅。」室外毫不吝惜地赐予光线,境内恍如玻璃光盒般地透净,找个最爱的静雅角落入座,再来细赏这儿的珍馐美馔吧。瞧见那绿壁旁的酒窖?原来 B2W 的专业侍酒师也附设为访客们作精心 wine and meal pairing 的贴心服务。

Helmed by award-winning Malaysian head chef from Kuala Lumpur who has years of experience in many countries, Chef Kelvin brings his vast experience with not one but three Michelin restaurants in France in a bid towards modernising French and Japanese cuisine and serving it with a touch of artistic elegance. From entrées to desserts, from meat to crustaceans, wine and meal pairings are as varied as their cuisine is nuanced. Even the place is way spacious than it used to be previously. Coupled with the chic cutlery set, crisp table linen and charming chandeliers, everything comes together to spell fine dining at this upscale waterfront destination.

PS: To preserve the fine dining ambience for all diners, do abide by the following house rules: Smart casual attire; No smoking and no pets allowed; children under 10 are not allowed to be seated in the main dining hall but are welcome in the garden sitting area.

If you need a little privacy along with your meal to make things that much more special, whether it’s your birthday, anniversary, a corporate dinner or a special occasion with family and friends, the exclusive ambience here makes it all ideal.

PS: Two private rooms (8 & 12 pax) are available, and can be combined depending on your requirements. Prior reservations and custom set menus are available upon request.

前菜 – 餐前自制面包 Homemade Bread

正式用餐前,一旁的服务人员非常贴心地为大人推荐与讲解所点选的料理,并会送上这如手掌般大小的餐前面包。这颗金黄色的餐前面包用手拨开后立即喷香,外酥内软真让人情有独钟。「好蓬松的空气口感,品尝起来还有些Q弹奶香,若非这是餐前面包,大人可是会吃上瘾啊!」

Before we start, we were presented with a slice of Paris (perhaps just wishful thinking on our part). However, this fluffy baked treat made strictly without preservatives, additives, or flavourings instantly won our palettes over within minutes of being served.

前菜 – 香煎鸭肝与温泉蛋佐白奶油酱 Pan Seared Foie Gras, Onsen Egg and Caramelised Morel Buerre Blanc

翻阅餐谱时决定来场不期而遇的奢侈,就让这道将法式精髓与日式食材完美结合而成的精致前菜来犒赏滋润味蕾吧。

香煎至表皮微脆的鸭肝与温泉蛋佐白奶油酱 (Pan Seared Foie Gras, Onsen Egg and Caramelised Morel Buerre Blanc, RM75) 「煎得既香脆又软嫩的鸭肝,果然不负大人所托,特殊的肝香与温泉蛋香彼此交融,华美而香浓。白玉般的蛋表面让人不忍戳破,品尝这道前菜务必轻柔对待。对了,切记趁热享用才能尝鲜。」

If the presentation and plating are anything to go by, the starter serving of Pan Seared Foie Gras, Onsen Egg and Caramelised Morel Buerre Blanc, is quite an impressive start. A classic example using a mix of Japanese ingredients in modern European cuisine, the foie gras was pan-seared to take out the usual distinctive taste instead of serving it raw, resulting in a chewy texture with a slightly crispy skin. Mix in the onsen egg and with the morel buerre blanc, this appetiser almost felt like a main course on its own!

主食 – 日式上汤汁拌鲜虾昆布乌冬 Udon Aglio Olio with Bonito Stock, Red Sea Prawn and Konbu

品尝之后让大人激赏不已欲罢不能、无时无刻思念的就是这道诱人主食 - 日式上汤汁拌鲜虾昆布乌冬 (Udon Aglio Olio with Bonito Stock, Red Sea Prawn and Konbu, RM40) 「昆布、柴鱼与日式上汤汁混拌着弹牙的乌冬面,微微的咸酸口感交缠在嘴里,越嚼越香,器皿下的汤汁绝对是这道主食的灵魂。大人卷起的每一口皆是幸福的滋味啊!大推荐。」另一贴心之作就是这儿的鲜虾皆已剥下外壳,矜持无罪优雅万岁。

We dare say that this Udon Aglio Olio with Bonito Stock, Red Sea Prawn and Konbu is one of the best-tasting pasta that we’ve had in a long while, simply because of the udon done al dente instead of your usual spaghetti. Each bite into the red sea prawns was juicy and packed with flavour, while the amount of konbu and dried bonito flakes that were an add-on was just right, And the best part? The fusion dish wasn’t drenched in olive oil unlike the others we had, and the result of using superior Japanese stock is umami personified and super oishii!

主食 –  烤羊扒 Roasted Lamb, Skewer Roots Vegetables, Puree & Tomato

另一份让大人舌尖起舞的主食就是烤羊扒 (Roasted Lamb, Skewer Roots Vegetables, Puree & Tomato, RM56),「羊皮衣被烤炙地非常香脆,那份羊肉独有的咸香油脂好暖嘴,有点类似日常所食的烧肉口感,搭上串烤食蔬与蘸酱中和肉香解腻,甚有中西合璧的风味。」若将羊扒来个横切面解析:外层皮衣极脆,肉层呈全熟,肉心部分则为七分熟,一口咬下毫无羊膻味、层次有力。

Here comes our piece de resistance: Roasted Lamb, Skewer Roots Vegetables, Puree & Tomato. A simple roasted lamb prepared sous vide, then pan-seared to a knife-tender medium-pink and served with skewer roots vegetables, puree and tomato. No gaminess whatsoever, just absolute perfection, if we may say so ourselves.

大人对于这一套四式的每日精选午餐套餐 (RM60++) 的尝后感即是:「受宠若惊。」每一道的的滋味与份量皆极富诚意 ❤️ !

  • 前菜:Marinated Unagi, Arugula Salad, Pickled Tomato with Tamago Scramble Egg
  • 浓汤:Seafood with Black Mussels, Sakae and Green Onion
  • 主食:Sous Vide Yellow Chicken, Caramelised Garlic Puree with Aromatic Vegetables

首先端上的开胃前菜非常对味,带有微微酒香滋味的烤鳗鱼与嫩黄的日式玉子烧式炒蛋,「两者交织的滋味绝对能一秒打动舌尖,好香好轻嫩。」搭以些许涩苦的芝麻菜沙拉瞬间开胃。

品尝了前菜,一旁的服务人员送上了这一道以法式炖锅置放的海鲜浓汤,「汤汁里的食蔬颗粒倍添口感,海鲜的清甜与清酒的醇香,喝着喝着满口异香,心情豁然开朗啊。」

B2W 的料理出品极具美感而又充满食欲,就好似一幅艺术品。这道以真空低温烹调的鸡扒滋味清甜香嫩锁汁,「以低温慢工端出的鸡肉果然湿润毫无干涩感。」

每周皆会更新的甜点,「今日的甜点为搭配了花生酱的提拉米苏,太甜腻?别担心,主厨贴心地准备了百香果蘸酱、浆果与竹炭香屑调合口中提拉米苏余韵。」

大人小分享B2W 於午餐时段 (中午十二点至下午三点) 并无供应其他餐谱内的单点料理。

If you are not sure what to order here, you can opt for B2W: Brunch2Wine‘s daily set lunch meals priced between RM45++ (3-course) to RM60++ (4-course) per set, proving that even casual dining can also be about elevating familiar dishes in understated ways.

A sweet-marinated unagi appetiser sits on top of a generous portion of tamago scrambled egg served with fresh arugula and pickled tomato, while the sake and green onions add depth to the black mussels in this flavours seafood stock. The main course is a simple yellow chicken prepared sous vide, then topped with caramelised garlic puree and served with aromatic vegetables. If you still have room for dessert after all this, then the tiramisu here is a must.
